Bowwow Brownies

  • 1/2 cup vegetable oil
  • 2 tablespoons honey
  • 1 cup whole wheat flour
  • 4 eggs
  • 1 teaspoon vanilla
  • 1/2 cup carob chips
  • 1/4 cub carob powder
  • 1/2 teaspoon baking powder

    Preheat the oven to 350
degrees.  In a medium bowl, blend
the oil and honey thoroughly using a
wooden spoon.  Add the remaining
ingredients and mix well.
    Pour onton a greased 15-by-10
inch baking sheet or pan.  Bake for
30 to 35 minutes.  Cut into bite-size
squares, and treat your pooch!

Mini Muttballs and Ditalini
4 Servings

Growing up Italian-American, one
of the first meals you eat with
your first two teeth is pasta in
broth.  When you get up to about
four teeth, you get your first
meatball.  My "kid," Isaboo, loves
them, so now I call them
"muttballs."  Here are some for
you and your pup.

  • 6 cups chicken broth
  • salt
  • 3/4 pound ground beef, pork
    and veal
  • large eggs
  • 1/3 cub chopped shredded
    carrots
  • 1/3 cup grated parmigiano-
    reggiano cheese, plus more for
    sprinkling
  • 1/3 cup bread crumbs
  • 1/4 cup finely chopped parsley
  • 1 clove garlic, mashed into a
    paste with a little salt (optional)
  • pepper
  • 1/2 pound ditalini past

    In a large, deep skillet or
saucepan, bring the broth to a boil,
then salt it and lower to a simmer.
    Meanwhile, in a bowl, combined
the ground meat, eggs, carrots,
cheese, bread crumbs, parsley and
garlic paste, if using; season with
pepper.  Form into 1-inch balls.
    Drop the meatballs into the broth
and simmer until cooked through,
about 5 minutes.  Stir in the pasta
and cook until al dente, 6 to 7
minutes.  Let cool before serving to
your pooch!  Season the people's
portions with salt and pepper and
sprinkle with more parmigiano-
reggiano.

Chicken BLT

Makes 1 Pup Sammy
and 1 People Sammy

~~~~~~~~~~~~~~~~~~~~~~~~~~~~~

  • 4 slices TURKEY bacon
    (NOT PIG BACON.  PIG
    BACON CAN KILL YOUR DOG)
  • EVOO:  Extra-virgin olive oil for
    drizzling
  • 2 chicken cutlets (6 1/2 ounces)
  • 4 slices whole wheat bread,
    toasted
  • 1/2 cup chicken or vegetable
    broth
  • salt and pepper
  • 1/2 avocado
  • 1 small plum tomato, seeded
    and chopped
  • Juice of 1 lime
  • a few dashes hot pepper sauce
  • 1 leaf romaine lettuce, torn in half

       In a medium nonstick skillet, over
medium-low heat, cook the TURKEY
bacon until crisp (NOT PIG BACON),
about 11 minutes.
    Wipe out the skillet and drizzle with
a little EVOO.  Cook the chicken,
turning once, until opaque, about 3
minutes on each side.
    For the pup, finely chop 1 piece
chicken, 2 pieces toast and 2 slices
TURKEY bacon, and combine in a
bowl.
Moisten with the broth and serve.
    For the human, season the
remaining 1 piece chicken with salt
and pepper and set aside.  Mash the
avocado and mix in the tomato, lime
juice and hot pepper sauce; season
with salt.  Top 1 piece toast with half
the avocado mash, the lettuce, the
reserved chicken, the remaining 2
slices bacon, more avocado mash
and the remaining piece of toast.  Cut
the sammy from corner to corner.

Cheesy Zucchini Frittata
2 servings

This makes a nice breakfast,
lunch or dinner for people, too.

  • 1 baking potato, peeled and
    thinly sliced
  • 2 tablespoons milk
  • 3 eggs, beaten
  • 2 tablespoons extra-virgin
    olive oil (EVOO)
  • 1 small zucchini, chopped
  • 1/2 cup shredded asiago
    cheese

    Preheat the oven to 375
degrees.  Place the potato in a
small bowl with enough water to
cover and microwave at high power
until tender, about 8 minutes.  
Drain, add the milk and mash with a
fork; let cool.  Mix in the eggs.
    In a medium, oven proof skillet,
heat the EVOO, 2 turns of the pan,
over medium heat.  Add the
zucchini and cook until tender,
about 5 minutes.  Add the potato
mixture and stir to combine.  Bake
until set, about 10 minutes.  
Sprinkle the cheese on top and
bake until melted, about 2 minutes
more.  Let cool, then cut into
wedges.

What's Up, Dog?

Power Pooch Smoothies
4 Servings

Yogurt is good for a doggy's
digestion-and people's too!  For
your own smoothie, double the
honey or replace the water with
orange juice and top with some
shredded coconut and a cocktail
umbrella.  Lie down on a pool
chair under the sun and enjoy!

  • One 8-ounce container plain
    yougurt
  • 1 cup blackberries or
    raspberries or 5 large, hulled
    strawberries
  • 1 mango, sliced
  • 1 very ripe banana
  • 1 tablespoon honey
  • 1 cup ice water

    Process all the ingredients in a
blender at high speed until smooth.  
Pour pooch smoothies into small
bowls and freeze.  Remove from the
freezer, set on the floor and let your
pooch lick the treat.

Peanut-Carob Isabooscotti

Makes 16 Biscuits.

These are easy to make and really
tasty.  If you don't own a cookie
cutter no big deal, just shape the
dough into logs, slice it and bake it
twice-like biscotti.  Then, melt
some carob chips and drizzle over
the biscuits.  Happy Birthday, Pup!!

  • 2 cups whole wheat flour
  • 1 tablespoon baking powder
  • 2 pinches ground cinnamon
  • 1 cup chunky peanut butter
  • 1 cup milk
  • 1 cup carob chips
    
    Preheat the oven to 400
degrees.  In a large bowl, combine
the flour, baking powder and
cinnamon.  Place the peanut butter
in a medium bowl and microwave
at high power to soften, 5 - 10
seconds.  Whisk in the milk, then
stir the mixture into the dry
ingredients.
    Shape the dough into a long,
flattened log and place on a
greased baking sheet.  Bake for 20
minutes; remove from the oven and
let cool for 10 minutes.  Slice the
log crosswise on an angle into 1-
inch-thinck piecws.  Set the slices
on their sides (they should look lik
biscotti) and bake until crisp.  10-12
minutes more.  Transfer to a rack to
cool.
    Melt the carob in a microwave or
on the stovetop over low heat.  Thin
the melted carob with 1
tablesopoon water, it needed.  
Using a spoon drizzle the melted
carob over the biscuits.  Let cool
completely.  Store in an airtight
container (if you have any left over)
